Elon Description
Ingredients:
3 to 4 Chicken Drumsticks
2 to 2 1/2 cups Chicken Broth
Water as needed
4 fresh Flour Tortillas sliced into spoon sized pieces
2 teaspoons Kosher or Sea Salt
Liquid from one can Condensed Chicken Noodle Soup (no noodles)
1/4 to 1/2 cup Evaporated Milk or Cream
2 Tablespoons Cornstarch
1 Tablespoon Dairy Butter
Fresh ground Black Pepper to taste
*optional: dash of Nutmeg
Pour broth/water in medium sized pot, add just the liquid from a can of chicken noodle soup (not the noodles). Dissolve salt in water, stir in well. Add chicken and bring to a boil.
Once boiling, reduce heat to a simmer. Simmer until meat has begun to pull away from the smallest end of the chicken drumsticks. Then remove chicken from pot. Chill chicken in the fridge while making the sauce.
Bring broth back to a boil. Cut up flour tortillas into spoon sized pieces. Add cut up flour tortillas to the boiling broth and stir in. The tortillas will float at the beginning, but will soften and sink as it cooks.
Mix cornstarch and milk together in a small cup. Blend out all the cornstarch lumps and dry spots. Once that's smooth, pour into the broth while continuously stirring. Cook stirring constantly for 8 to 10 minutes to fully blend and cook the cornstarch mixture. Reduce heat to a simmer and stir until the sauce has thickened.
Turn off heat and cover the thickened sauce and dumplings. The dumplings should be distributed all through the sauce by now, and silky tender. If the sauce is too thick, add a little more water and stir in well.
Debone chicken drumsticks and add the meat to the sauce and dumplings. Add butter and nutmeg (if using) and gently stir in. Taste for salt and adjust if needed. Crack in some freshly ground black pepper and stir in right before serving.
This makes enough for two people. Double the recipe if needing to serve more people.
A Tip:
If possible, avoid using flour tortillas that's been stored in the fridge or freezer. They definitely will absorb odd flavors and odors easily. Those unpleasant flavors and odors will become a part of the meal if using those. I learned this the hard way, so I'm advising you in turn.
