This cold, simple salad was a staple in our home when I was growing up, and still is a huge favorite year round. I've made meals on this stuff!

2 cups shredded Carrots

1/2 cup Raisins

1/2 cup Hellman's Mayonnaise or Miracle Whip Salad Dressing (plus more)

Plump the raisins in a little warm water while preparing the carrots.

Peel and trim 4 carrots, then shred them in a medium sized bowl. Two cups is a starting point, you may want more, go by how many people you're feeding.

Drain the water from the plumped raisins and combine raisins with shredded carrots.

Mix in the mayonnaise. Fold things until it all goes together. The mayo will turn a bit orange from the carrot juice. You might need more mayo or salad dressing because the raisins and carrots will absorb some of it.

Cover the mixed salad and chill a couple of hours or overnight (for the best development of flavors). Next day it may need more salad dressing or mayonnaise if it's too dry.

This is wonderful on a hot day when something cold is desired. It's high in fiber and highly refreshing.

You can easily adjust the measurements of ingredients as desired. Dad liked lots of raisins and not much mayo, but Mother wanted a bunch more mayo and carrots.. guess that's why I was always given the task of making this, lol.
