These are the easy to make meatballs Mom made to go with our spaghetti. Dad and I always looked forward to her making these! They can be used in many entrees, with several types of sauces.

Mix:

1 part cooked white rice with 2 parts raw ground hamburger or ground chuck

1 teaspoon salt

2 teaspoons black pepper

1/4 cup all purpose flour (or less)

1 beaten egg.

Mix the above ingredients by hand until it holds together well. You won't need more than 2 tablespoons of flour if mixing a small batch of meatballs, such as for 1/2 pound of burger. 1/4 cup flour will be needed if mixing a large batch of meatballs with a pound or more of ground burger.

Form meat mixture into 1 to 2 inch meatballs, then roll meatballs in flour. Set aside.

Mom would pan fry them on all sides until they're crispy on the outsides. I often place them in a fryer basket and deep-fry these to speed up cooking time.

From there, simmer them in the sauce or gravy of your choosing for about 10 minutes, then serve with the noodles you like. Easy-peasy! They will taste even better the next day.
