I don't have any specific name for this, so this is what I've named it. It's one of the oldest food memories I have from my childhood living in the Desert Southwest many years ago. Ingredients: 1 whole chicken, cut into parts 4 to 6 Mild Jalapenos sliced or chopped 1 to two 8oz blocks Cream Cheese, soft, room temperature 1+ cup shredded Monterey Jack, or Colby, Cheddar or Oaxacan Cheese 1 to 2 Onions Bacon For Baked Whole Chicken Pieces: Spray a roasting pan or deep casserole dish with butter spray, or grease with bacon drippings or butter. Slice an onion into slices, layer sliced onions in the bottom of the casserole dish. Place the raw chicken pieces over the sliced onions, then surround the chicken pieces with all the rest of these ingredients, (pinch cream cheese into dollops and add to the rest of the ingredients). Keep things loosely assembled, not compressed. The chicken pieces can be wrapped in bacon before being placed in the pan. Or the bacon strips can be laid loosely across the top, then baked. At other times, I've placed everything in the pan in no particular order, then baked it. Bake at 375°f for approximately 1 1/2 hours, loosely assembled in the baking pan. Don't compact the ingredients. ----------------- For A Casserole: Oil or grease a casserole dish and set aside. Simmer the chicken, cool then skin and debone. Chop the cheese or shred it, chop the jalapenos and onions. Pinch the cream cheese into dollops. Pull cooked chicken into pieces. Either leave the bacon strips whole to lay across the top to bake, or chop the bacon and cook it until softly crisped, then add them to the rest of the casserole ingredients. Add everything to the casserole dish and bake at 350°f for 30 minutes, or until hot and toasty throughout. As the chicken is already cooked, this is just assembling and baking the casserole until bubbly-toasty. -------------------- These ingredients can be used for a variety of meals. I've used the above combination of ingredients to make anything from chicken-cheese enchiladas, to quesadillas, burritos, or to stuff poblanos or other kinds of peppers with. As a casserole, all the ingredients are chopped, placed in the casserole dish and baked. For that, the chicken must be cooked prior of adding to the casserole dish. Another way is to coat the chicken pieces generously with soft cream cheese, then roll in shredded cheese. Then press press strips of jalapenos and onions around the cream cheese-cheese coated chicken pieces. Then wrap those bundles with bacon strips to form them into bacon wrapped bundles. Bake the bundles at 375°f in the greased casserole dish for about 1 1/2 hours until fully cooked. The pan can be covered with foil first, or left to roast uncovered. No matter how it is assembled, it's always savory, satisfying, and smells addictively good. As a child I craved this, and I still do.
