Elon Description

This is my go-to solution when there's no ice cream in the freezer, and a trip to the grocery store to get more isn't possible.

2 cups full fat Dairy Sour Cream

1/4 cup to 1/2 cup Cane Sugar

2 to 3 tablespoons Vanilla Flavoring

1/4 teaspoon Kosher or Sea Salt

It's easy; mix everything together until the sugar crystals aren't gritting in the bowl any more, they dissolve. Once it's fully mixed and no longer gritty, spread it out in a pie plate (or other flat metal pan), then put in the freezer.

Go back and mix it every 10 to 15 minutes until it has the desired ice cream texture. It's flavor and texture is similar to soft-serve vanilla ice cream, and melts about like soft-serve will. That's all there is to it!

This can be flavored as you desire. Any frozen fruits run through a blender will work well in this, or crushed cookies, drink flavoring powders, fruit powders, and coffee flavoring syrups. Be aware that syrups can make it a little runny if there's too much used.

Please use a quality brand of dairy sour cream, avoid the non-dairy artificial "sour cream". That will not behave the same way and can often taste gross. I use full fat Daisy Sour Cream. Yogurt can absolutely be added to this too.

If it's not sweet enough for you, let it soften on the countertop a few moments, then mix in more sugar and follow the original instructions above, refreeze and enjoy!

If it's too sweet, just add some more sour cream or yogurt, mix until well combined, refreeze and you're good to go!

I've made this as emergency ice cream for over a decade. Works well when there's no ice cream in the freezer and I can't get out for a grocery trip. I love that I can flavor it any way I like.
